Pork Ribs

Remove membrane from rack of ribs. 

1/3 c Mustard
1/2 c Brown sugar

Mix and rub on ribs.

Sprinkle with favorite seasoning.

Put on Grill and smoke for 3 hours.  Spray with apple juice at least once an hour to keep it moist.

After 3 hours pull ribs.  Put ion a double layer of foil.  Fold up sides and seal ends.  Put on Brown Sugar and drizzle honey on top.  Pour Apple Juice on top of ribs.  Seal foil and return to grill.  Turn up heat to 225.  Cook 3 hours.

Remove from foil.  Place ribs back on grill.  Spread on BBQ sauce.  Turn temp back to smoke.  Cook 30-60 min.

Delicious!

Game Day "Brats" Breakfast

Game Day "Brats" Breakfast

1 lb. ground sausage
4 previously baked (or microwaved) potatoes, with skins on. Cut in half and into 1/2 in. slices.
1/3- 1/2 very thinly sliced yellow onion
3 cloves of minced garlic
1 cup of sauerkraut. Remove liquid by pressing Ito through a cheese cloth or fine strainer.
8 Eggs
Salt and pepper to taste
1 Tbsp. mustard
2 Tbsp. sour cream

Cook sausage until almost brown. Add sliced potatoes and onions, cook until everything is brown. Add garlic and cook until aromatic, about 30 seconds. Add sauerkraut and cook until warmed through. At this point you can either put everything in a baking dish and add the eggs, then bake at 425 until you reach desired doneness... Or you can just cook the eggs in s separate pan and then top the sausage mixture with the eggs. Mix together spicy mustard and sour cream, top your eggs and serve.

This was really yummy with Rye bread!

Gee Ribs

Mix:
1 1/2 cup ketchup
1 cup brown sugar
1/4 cup vinegar
1/4 cup Worcestershire sauce
1 tsp chili powder
1 cup water

Layer in pan or crock pot:
3-4 lbs. country style pork ribs
6-8 potatoes
2-3 nonsense

Pour barbecue mixture overtop. Bake at 350 for 3-3 q/2 hours or cook all day on low in crock pot.

Lasagne Soup

1 lb Sausage
Large onion, chopped
Saute the onion and sausage together.  Drain fat.
Add:
2 Boxes of Chicken Broth
Large bag of Shredded Carrotts
Large container of Sliced Mushrooms
1 T Basil
2 cans Chopped Italian Tomatoes
1/2 box small pasta shells
Cook until shells are cooked
Add package of Spinach

Serve with Mozzarella cheese

Mesquite Pork Chops with Apples and Onions

6 Pork Boneless Loin Chops, 3/4 to 1 inch thick
2 C Mesquite Wood Chips
2 Medium Granny Smith Apples, cored and cut crosswiuse into 1/2 inch slices
2 Medium Yellow Onions, cut crosswise into 1/2 inch slices

Prepare Jalapeno Marinade, reserve 1/2 cut for brushing on pork, apples and onions during grilling.  Pour remaining marinade over pork in shallow nonmetal dish or resealable plastic bag: turn pork to coat with marinade.  Cover dish or seal bag and regrigerate at least 2 hours but no longer than 24 hours.

Cover wood chips with water; soak 30 minutes.

Brush grill rack with egetable oil.  Heat coals or gas grill for direct heat.

Drain pork; discard marinade.  Drain wood chips and place directly on hot coals.  Immediately cover and grill pork 4 to 5 inches from medium heat 10-12 minutes, turning once and brushing with reserved marinade, until slightly pink in center.  Add apples and oniols for last 4 to 5 minutes of grilling, turing and brushing 2 or 3 times with reserved marinade until crisp-tender.

Serve pork with apples and onions.

Vegetable Soup

1 lb of your choice of meat (Ground Beef or Sausage or Stew Meat)
1 Quart Stewed Tomatoes
1 Lg Potato, chopped
1 Lg Carrot, sliced
2 T Barley
2 C Tomato Juice
1 T Worcestershire Sauce
Any other vegetables you happen to have on hand and would like to use.
Salt & Pepper to Taste

Brown meat and add remaining ingredients to pan (you can cook this all day on low in the crock pot if you want).  Bring to a boil and then reduce heat and simmer for 2 hours covered. 

(If you are using canned vegetables, I usually throw in the water that they are canned in)

Pork Barbacoa

2 lbs Pork
1 C Dr. Pepper (not diet)
1/4 C water
1 t garlic powder
1 t salt
3/4 C packed brown sugar
1/4 t pepper
1 (4 oz) can diced green chilis
2/3 C salsa verde
garlic powder and salt to taste

Add the first 5 ingredients to slow cooker. Let cook on low for about 8 hours. Shred the pork. you may want to drain some of the liquid depending on how runny you want it. Then add the final ingredients to the shredded pork. Cook in slow cooker until heated through, about another 10-20 minutes.

Stuffed Pumpkins

5 sm Pumpkins
8 ozs Sausage
1/4 c chopped Onions
2 T chopped Green Pepper
1/2 Apple - skinned and chopped
1/4 c Craisins
1/4 c Apple Juice
1 t Thyme
1 t Oregano
Salt
Pepper

Seed, peel and chop 1 pumpkin.  Cut tops off remaining pumpkins and seed.  Cook sausage, onion and pepper.  Add chopped pumpkin, apples and craisins.  Cook until pumpkin becomes tender.  Add juice and spices.  Spoon into pumpkins.  Bake at 350 for 25 minutes covered.  Remove foil and bake 10 more minutes.  Serve immediately.

Slow Cooker BBQ Beef Sandwiches

1 - 3 lb Roast (Beef or Pork)
2 c BBQ Sauce
1/2 c Peach Jam
1/3 c each Red and Green Bell Pepper
1 T Dijon Mustard
1/2 Packed Brown Sugar
1 small Onion

Cut roat in 4 pieces.  Place in crockpot.  Mix remaining ingredients.  Pour over meat.  cook on low 7-8 hours.  Remove meat and slice thinly.  Return to crockpot for 20-30 minutes.  Serve on buns.
